Ahhh! Not doing a good job with posting as regularly as I’d like…life has been crazy busy this week, followed by an awesome weekend with visiting friends (recappin’ tomorrow!). So tonight will be a short, but oh-so delicious dessert that I found a few weeks ago…and have made three times since (no self-control here). This dessert is great for potlucks and hungry family get togethers! It’s so easy…hard to believe it’s so deeeeelish!
1 8 oz. package reduced fat cream cheese, room temperature
1 cup powdered sugar
3/4 cup creamy peanut butter (I used reduced-fat to save some calories and it worked great!)
3 tbsp. brown sugar, packed
3/4 cup chocolate chips (I had to use mini-chips because it was all i had!)
3/4 cup peanut butter chips
Dippers- graham crackers, apples, bananas, pretzels
Beat all ingredients except chips in large mixing bowl until well blended. You can also use a spatula if you stir consistently for 3-4 minutes.
Form “dough” into a ball shape, and wrap with saran wrap to ensure it keeps it shape. Freeze for one hour.
Remove from freezer and let thaw for 5 minutes. Serve with dippers!
Notes and Tips: When I made this, I used mini-chocolate chips that I needed to use up. I would suggest NOT using these when making this, because although it tastes exactly the same as when you use normal sized, the appearance (as you can see) is not as symmetric (for you Type-A foodies out there like me)! Also, I made this recipe also using full-fat peanut butter and cream cheese, and did not taste a difference from here where I used the reduced fat, so I think I’ll stick with these adaptations to save a few cals (every bit helps!).
