Welcome to More Than Just Dessert! I’m Emily, a busy 27 year old nutrition professor.. I live in Minnesota, by way of Madison, WI and Iowa. My blog has evolved over the years, but ultimately I write about trying to find a healthy balance in this crazy life. Andddd I guess I write a little about my career in nutrition. Andddd a little about food. I love food.
I’m finished my Ph.D. in Nutritional Sciences (with an emphasis in Human Nutrition) in June of 2014. My Ph.D is from UW-Madison. I am now a nutrition professor in Minnesota…and I LOVE IT! This past summer (2014), I took a hiatus from blogging while traveling, and after a lot of reflecting, realized that my blog covers a lot of topics, so I’ve been working on refocusing this fall! I continue to blog in my spare time and can’t wait to see all it has in store in the future..
Here’s how More Than Just Dessert evolved…
Coming to grad school in the fabulous state of Wisconsin, I lived on my own for the first time and developed a passion for cooking,. So in 2011, I started blogging recipes and fun foodie finds.
My love for cooking grew, perhaps a little too much. The first couple years of grad school were stressful and I ate way too much cheese and drank way too much beer. I became a not-so-healthy person and was miserable– I weighed more than I ever had and was constantly buying newer, bigger pants. In Spring of 2012, I had enough. I signed up and started training for a half marathon cold-turkey and started applying what I was learning about nutrition in grad school to my everyday life.
You see, being healthy was not new to me—I grew up being an athlete and my dad was always teaching us about nutrition. Weight had never been an issue for me. I played tennis in college and knew how far a good diet and exercise could get me. Between spring of 2012 and spring of 2013, I documented my 40 lb weight loss on the blog.
While I wasn’t perfect, I tried to document my weight loss journey as best as a busy graduate student could:
I kept off the weight throughout the end of graduate school. In June of 2014, I successfully defended my Ph.D. and became Dr. Emily!
I worked hard in graduate school, knowing that I always wanted to teach at a smaller college. With a little luck, I was offered a job as a professor at a small liberal arts college before I graduated! I moved to Minnesota and can honestly say that I have my dream job. My career has taken off and my blogging has slowed some, but I still believe the same things I did before. This blog is here to help inspire those who believe they can’t do it or too busy. Or to help produce quality nutrition information. Or to provide a laugh. I love blogging about the good and the bad.

Recipes! My life as a slave graduate students meant most days, I didn’t have very much time to cook and a limited budget. You’ll find easy, smaller dished recipes on this blog that are mostly healthy. I love to makeover recipes to be healthier, especially desserts!
Fitness Through Ultimate and Triathlons! I consider myself an ultimate-frisbee enthusiast and novice tri-athlete so I often post about fitness related workouts for beginners and busy people. I have done two triathlons so far, with a 3rd scheduled for August 2015! I talk about things I learn along the way, as well as tips for training in a busy life.
Nutrition Talk. While I am not a registered dietitian, I have learned so much while pursuing my doctorate in the nutrition field! I love writing about nutrition and healthy living. I try to put my Ph.D. to good use on here!
Restaurant Reviews The best thing about living in Madison, WI was that it was the king of the independent restaurants of the world. I learned to love trying new foods and new beers.
Travel Guides My passion is travel. I am determined to see as many places before I settle down. See my travels page for more on where I’ve been and where I’m going.
Honest posts about grad school life/professor life. Let’s face it, I’m not perfect and sometimes I’m gonna talk about life here. I promise it won’t be too painful. 🙂

This blog is called More Than Just Dessert, because in my opinion, that’s how life goes–enjoy the sweet stuff when ya can, but learn from it all. One’s journey to live a healthy lifestyle is much like the work that goes into a meal. The cooking and planning that goes into it, the bitterness of when something doesn’t turn out right, and yes, the sweetness of desserts– it can all be relative to our day to day events that shape our lives…
…because life, just like a meal, is more than just dessert.
