Warning: this recipe is not healthy. Like, at all. That being said, it’s one of my favorite desserts my mom made when I was growing up. What a perfect test of moderation for the holidays, right? Right. I made these a couple weeks ago because I hadn’t had them in forever and I needed a sweet treat to take into work to thank all my coworkers for their help in prepping for stuff last month. They were all gone by the end of the day, so I’ll take that as a good sign!? I love these bars and how they are very ooey and gooey, topped with chocolate and peanut butter! Ya can’t go wrong with that! Plus, they are easy and quick to whip up (yes, this is a recurring theme in my cooking). Enjoy!
O’Henry Bar Ingredients
2/3 cup butter
4 c oatmeal
1/2 cup dark or light corn syrup
1 cup brown sugar
2/3 cup peanut butter
1 C semi sweet chocolate chips
Melt margarine and add everything but chips and peanut butter.
Press in 9 X 13 pan (greased). Bake at 350 degrees for 12 min or til bubbly. Remove from oven, cool for 10 min. Melt chips and peanut butter, frost.
And that’s it! It’s probably a good idea to let the bars cool for about 30 minutes after you frost them so they don’t fall apart as easily.
