Alright, I need to be honest, I did not invent this week’s Tuesday Trick. But that doesn’t mean that it isn’t one of my go-to methods of getting a quick breakfast in! I first heard about eggs in a mug from Hungry Girl, a cookbook and newsletter I love. Eggs in a mug are basically an egg scramble…just made in the microwave with a mug instead of a pan on the stove! They cook in under 2 minutes and are handy for on the go. It’s nice change from the usual grab-and-go yogurt or cereal when time is short.
Here’s what you need:
A mug, eggs or egg beaters, and whatever ingredients you want to scramble. I used 1 egg and 2 egg whites, arugula, 3 cherry tomatoes, a heaping tablespoon of onions, and a laughing cow light Swiss cheese wedge.
Add all the ingredients in the mug and mix well.
Microwave for 1 minute 45 seconds and…
Hooray! Scrambled eggs in a mug! Total cooking time under 3-4 minutes with the chopping and no pans to wash!
I paired my eggs with an Arnolds Sandwich Thin (AWESOME product!) for toast and a banana.
